Kalaekilohana Fried Rice

Ingredients

  • 2 tablespoons olive oil
  • some bacon
  • some sausage
  • leftover ham, chicken, pork,
  • some spam (local favorite)
  • 1/2 onion
  • 1 red or yellow pepper
  • 8 to 10 cups leftover rice
  • green onion
  • white pepper

  1. fry bacon first drain most of the bacon grease but save a bit, chop bacon, dice other meats to 1/4 inch and add to olive oil with a tbl of bacon grease.
  2. Chop half an onion and some red and yellow peppers and add to meat, continue to saute. You can add frozen peas and diced carrot, but not too much. Mushrooms are welcome. Kale and Spinach work too.
  3. Once meat and vegie mixture is well cooked, add 8 to 10 cups of leftover rice on top of mixture. Add 1/4 cup shoyu to the rice and break apart into the meat and vegies. Secret ingredient is White Pepper. Saute until fried. Add green onion 5 minutes before ready. You can add scrambled egg if you like, but I usually serve it under 2 eggs over easy.
