1 1/2 cups cubed hash brown potatoes, slightly thawed
1/4 cup chopped onion
1/4 cup chopped green pepper
1 1/2 cups cubed ham
8 large eggs
1/2 cup milk
salt and pepper to taste
1/2 cup shredded Cheddar cheese (divided)
1/4 cup shredded Monterey Jack cheese
Preheat oven to 350F. Lightly spray or butter an 8x8-inch baking dish.
In a bowl wisk together eggs, milk, salt and pepper. Set aside.
In a large skillet melt 2 tbsp. margarine and lightly saute onion and green pepper on medium heat. Add cubed hash browns. Stir to mix and heat potatoes through. Spread potato mixture into prepared baking pan.
Add ham to skillet and heat until slightly brown. Top potatoes with ham.
Melt 2 tbsp. margarine in skillet. Add egg mixture and sprinkle with 1/4 cup cheddar cheese. Constantly move eggs from sides and bottom until thickened and set but still moist. Spread eggs over the top of the ham.
Mix together remaining 1/4 cup cheddar cheese and 1/4 cup Monterey Jack cheese. Sprinkle mixed cheeses over top of eggs. Heat casserole in ove until cheese begins to melt.
