Baked Oatmeal: Breakfast-Brunch

Ingredients:

  • 3 cup Original oatmeal (not quick or instant)

  • 1 cup Brown Sugar or ½ cup Brown Sugar Spenda

  • 2 teaspoon Baking Powder

  • 1 teaspoon Salt

  • 1 teaspoon Cinnamon

  • 2 cups Milk

  • 1/2 cup Butter melted

  • 2 Eggs, beaten

  • 1 1/2 cups Fresh Apples or Seasonal Fruit

  • 1/2 cup Pecans, chopped

Step 1:

Preheat oven to 350 degrees. Mix all ingredients and grease a 9” baking pan with cooking spray. Pour oatmeal into pan. Bake at 350 degrees for 30-35 minutes. This bakes like a cake, insert toothpick to check doneness. Can be baked ahead and held for one hour in a warm oven. Garnish with fresh bananas and fresh strawberries
