Apple Cinnamon Pancakes

Ingredients

  • 1 teaspoon baking soda
  • 2 cups flour
  • 2 teaspoons baking powder
  • 2 tablespoons brown sugar
  • 1 teaspoon cinnamon
  • 2 eggs, beaten
  • 1 1/2 cups buttermilk
  • 1/2 cup sour cream
  • 1/4 cup melted butter or margarine
  • 1 apple - peeled, cored and grated

  1. In a large bowl, mix together soda, flour, baking powder, sugar, salt, and cinnamon.
  2. In a separate bowl, mix eggs, buttermilk, sour cream, and butter.
  3. Add to flour mixture and stir just until flour is moistened. Stir in grated apple.
  4. Place large spoonfuls onto a hot, lightly greased griddle. Cook, turning once, until golden brown.
