Banana Stuffed Cinnamon French Toast

Ingredients

  • 4 Eggs
  • 1/2 cup Sugar
  • 1 tablespoon Cinnamon
  • 1 cup Half and Half
  • 4 Portugese Rolls
  • 2 Bananas
  • 1 tablespoon Butter
  • 1/4 cup Powdered Sugar

  1. To make French Toast batter, whisk together eggs, sugar, cinnamon and half and half.
  2. Cut the rolls in half and slice them in the center, forming pockets. Mash 2 bananas and fill each roll pocket (should be about 1/4 banana per pocket)
  3. Heat a medium sized pan over medium high heat. Add 1/4 tablespoon of butter.
  4. Dip each piece of stuffed bread into the French Toast batter and place in the hot pan. Cook on each side until golden brown (about 2 minutes per side). Repeat until all bread is gone.
  5. Serve hot and sprinkled with powdered sugar.
