Puffy Fruit Pancake

Ingredients

  • 2 apples
  • 1 cup blackberries
  • 6 tablespoons butter
  • 1/3 cup brown sugar
  • 1 teaspoon cinnamon
  • 6 eggs
  • 1 1/2 cups milk
  • 1 1/2 cups flour
  • 1 1/2 teaspoon vanilla

  1. Prehat oven to 425 degrees. Melt butter in saute' pan, add sliced peeled apples, and berries, til tender but firm, add sugar and cinnamon.
  2. Butter a 10-12 inch round pie pan well. Put fruit in bottom of dish. In blender mix eggs, milk, flour,vanilla, and a little more brown sugar 2 tlb. or so, blend well.
  3. Pour custard over fruit, aprinkle with more cinnamon, bake 20-25 minutes til puffy and brown, and middle is done.
  4. Let stand 10 minutes before cutting, sprinkle with powdered sugar, and serve with maple syrup or a fruit syrup.
