Pumpkin apple pancake

Ingredients

  • 4 large eggs
  • 2/3 cup canned pumpkin
  • 2/3 cup all-purpose flour
  • 1 teaspoon vanilla extract
  • 1/8 teaspoon salt
  • 1 1/2 divided cinnamon
  • 4 divided light brown sugar
  • 3 butter
  • 2 large apples, peeled cored and cut into slices
  • powdered sugar for dusting

  1. Preheat oven to 425.
  2. In a large skillet over medium high heat, melt the butter. Add the apples and saute until just tender, about 5 to 7 minutes. Sprinkle with 2 Tbsps of the sugar and 1/2 tsp of the cinnamon.
  3. In a blender, combine the eggs, pumpkin, milk, flour, vanilla, salt, 1 teaspoon of the cinnamon and 2 tablespoons of the sugar. Blend for a few seconds to just mix the ingredients. Scrape the sides and blend again to incorporate.
  4. Pour batter on top of apples and bake until puffed and brown about 20 to 25 minutes.
  5. Dust with powdered sugar.
