Pumpkin apple pancake: Breakfast-Brunch

Ingredients:

  • 4 large eggs

  • 2/3 cup canned pumpkin

  • 2/3 cup all-purpose flour

  • 1 teaspoon vanilla extract

  • 1/8 teaspoon salt

  • 1 1/2 divided cinnamon

  • 4 divided light brown sugar

  • 3 butter

  • 2 large apples, peeled cored and cut into slices

  • powdered sugar for dusting

Step 1:

Preheat oven to 425.

Step 2:

In a large skillet over medium high heat, melt the butter. Add the apples and saute until just tender, about 5 to 7 minutes. Sprinkle with 2 Tbsps of the sugar and 1/2 tsp of the cinnamon.

Step 3:

In a blender, combine the eggs, pumpkin, milk, flour, vanilla, salt, 1 teaspoon of the cinnamon and 2 tablespoons of the sugar. Blend for a few seconds to just mix the ingredients. Scrape the sides and blend again to incorporate.

Step 4:

Pour batter on top of apples and bake until puffed and brown about 20 to 25 minutes.

Step 5:

Dust with powdered sugar.
