Pumpkin Love Muffins

Ingredients

  • 2 1/2 cups cake flour
  • 1 cup sugar
  • 2/3 cup brown sugar
  • 2/3 cup butter
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon nutmeg
  • 3/4 teaspoon salt
  • 3/4 teaspoon cinnamon
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon pumpkin pie spice
  • 2 eggs
  • 1 lb pumpkin (mashed or canned)
  • 1/2 cup milk

  1. Preheat the oven to 375 degrees. In an electric mixer, cream the butter and sugars until light.
  2. Add the eggs, one at a time.
  3. Add the pumpkin.
  4. In a separate bowl, combine the flour and all of the spices and mix together.
  5. Alternately add the dry ingredients and the milk to the mixer on low speed until just combined. Pour into greased and floured muffin tins and bake for 15 minutes. Enjoy!
