Pumpkin Muffins

Ingredients

  • 2 1/2 cups All Purpose Flour
  • 1 cup Light Brown Sugar
  • 1 cup Granulated Sugar
  • 1/2 teaspoon Salt
  • 1 1/2 teaspoon Pumpkin Pie Spice
  • 1 teaspoon Baking Soda
  • 1 cup Coarsely Chopped Toasted Pecans
  • 1 cup Golden Raisins
  • 4 oz Egg, whole
  • 1/2 cup Canola Oil
  • 1 teaspoon Vanilla Extract
  • 1 cup Pumpkin, solid pack

  1. In large mixing bowl, stir together all dry ingredients plus pecans and raisins. Set aside.
  2. In separate bowl, whisk together remaining ingredients. Add to dry ingredients and mix well.
  3. Spoon mixture into sprayed muffin pans. Bake in 350 degree oven for 20 minutes. Remove from oven, turn out on wire rack to cool.
