Grandma Nana's Cornbread

Ingredients

  • 2 whole Eggs
  • 1 cup Milk or Cream
  • 1 cup Cornmeal
  • 1/4 teaspoon Baking Soda
  • 1 teaspoon Baking Powder
  • 2 tablespoons Butter
  • 1 pinch Salt
  • 3 tablespoons Maple Syrup

  1. Pre-heat oven to 375 with a 10 inch Cast Iron skillet inside.
  2. Melt butter (20 seconds in microwave).
  3. Whisk together the eggs, milk, cornmeal, baking powder, baking soda, salt, butter, and maple syrup.
  4. Pour one tablespoon of oil into the hot skillet. Place on a stovetop burner on high until the oil is viscous. Add batter. The batter should sizzle. Leave on burner for 30 seconds- 1 minute. Place in oven, and cook until top is done. Approximately 18-20 minutes.
