From the Cottage of Jack Cream

Ingredients

  • 7 eggs
  • 1 cup milk
  • 2 teaspoons sugar
  • 1 lb Monterey Jack cheese(shredded)
  • 4 oz cream cheese(cubed)
  • 1 lb cottage cheese(small curd)
  • 2/3 cup butter(melted)
  • 1/2 cup flour
  • 1 teaspoon baking powder

  1. Beat together first three ingredients.
  2. Add the three cheeses, melted butter and mix well.
  3. Mix in flour and baking powder.
  4. Spray a 3 quart baking dish with non-stick pan coating and pour the entire mixture into the dish.
  5. Bake for 45-50 minutes at 350 degrees or until a knife comes out clean. Cut into rectangles to serve. Enjoy with a breakfast meat if desired and fresh fruit.
