Corn & Cheese Flan: Breakfast-Brunch

Servings: 10

Prep time:45 minutes

Ingredients:

  • 2 cups Cheddar Cheese - Grated or feathered

  • 1 cup Frozen or Fresh Cooked Corn

  • 10 Eggs

  • 1/2 teaspoon Salt

  • 1/2 teaspoon Pepper

  • 1/4 to 1/2 teaspoon Cayenne Pepper

  • 1 1/4 cup Milk

  • 3/4 cup Half & Half

  • 2 tablespoons Parmesan Cheese

Step 1:

Preheat oven to 350 degrees, Spray 9 x 13 Baking Dish with cooking spray.

Step 2:

Layer cheese, then corn in baking dish.

Step 3:

Mix remaining ingredients EXCEPT PARMESAN CHEESE and pour over cheese/corn.

Step 4:

Bake 45 minutes until lightly browned and fluffy. Sprinkle Parmesan Cheese and return to oven for 1-2 minutes.

Step 5:

We serve this with a peach mango salsa, sour Cream and guacamole garnish. Our guests love this and request this recipe more than any other. ITS SO EASY TO PREPARE!!!
