Cranberry Orange Bran Muffins

Ingredients

  • 2 cups Flour
  • 1 1/2 cups wheat bran
  • 1 1/2 teaspoons baking powder
  • 3/4 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1 1/2 cups brown sugar
  • 1 1/4 cups buttermilk
  • 2 tablespoons buttermilk
  • 11 tablespoons butter
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 1 tablespoon grated orange zest
  • 1 1/2 cups Fresh/frozen cranberries

  1. preheat oven to 350 degrees
  2. Line muffin tin with paper inserts
  3. Place flour, bran, baking powder, salt & baking soda in a large bowl. Stir in sugar and set aside.
  4. Whisk together buttermilk, eggs, melted and cooled butter, zest and vanilla in a bowl. Add flour mixture, stir until just combined - do not overmix. Stir in cranberries.
  5. Divide batter into twelve lined muffin cups. Bake at 350 about 30 minutes until browned.
