12 eggs, 3 Lbs. ricotta cheese, 1 1/2 cup sugar vanilla or orange flavor 2 TBS.
Heat oven 350 degrees, spray 9 x 13 pan with pam.
Mix all ingredients with a wisk, NOT WITH AN ELECTRIC MIXER.
Put in pan and bake for about 1-1 1/2 hours until the top is light brown and cake is not loose. Serve warm or put in fridge and serve cold. It is better the next day. The cake can last 2-3 days in the fridge. Top with fruit if desired. It is very rich, cut into small pieces.
