Stuffed Crepes: Breakfast-Brunch

Ingredients:

  • 2 1/2 cups Flour

  • 2 Eggs

  • 2 tablespoons oil

  • 2 1/4 cups Milk

  • 1/2 teaspoon salt

  • 1/2 teaspoon baking powder

  • 2 tablespoons sugar or subsitute with Splenda

  • 2 tablespoons Cinnamon Vanilla Creme Filling

  • 1/2 cup Blueberries, Stawberries, Sliced Bananas

  • Sprinkled with Powdered Sugar

Step 1:

Mix the ingredients together and beat until smooth. You can put mixture in the blender also if you are having trouble with lumps.

Step 2:

350 degrees on a griddle, butter the area that you will cook your crepes. Take a 1/2 c. of the batter and pour onto griddle let cook, they will not bubble wait 2 minutes and flip. Continue on the other side. They will lightly brown in areas. Remove and put onto plate.

Step 3:

Put two tbsp. of your fruit filling on top of crepe and smooth out, place a 1/2c. of your fruit inside and fold over in half. Sprinkle with Powdered sugar and a sliced orange and fanned strawberry.

Step 4:

Place two pieces of regular bacon but I prefer Turkey bacon. This is a beautiful breakfast and very healthy too.
