Coconut Shrimp

Ingredients

  • 2 lb Shrimp, cooked, peeled, de-veined
  • 1 cup White Wine
  • 1 cup Flour
  • 1 tablespoon Salt
  • 1 tablespoon Pepper
  • 2 cups Fresh Coconut Grated

  1. Combine flour, salt and pepper in a large bowl then mix in wine until just smooth then add shrimp.
  2. Let sit covered in fridge for less than one hour
  3. Remove shrimp from batter, shake off excess and then dredge in the coconut.
  4. Sauté shrimp in one even layer at a time (or deep fry) until outside coconut is golden brown
  5. Drain on paper towels and serve.
