Oatmeal Maple Syrup Muffins: Breakfast-Brunch

Ingredients:

  • 1/2 cup butter, softened

  • 1/2 cup dark brown sugar

  • 1/2 cup real maple syrup

  • 1 egg

  • 1 teaspoon vanilla extract

  • 1/2 cup half-and-half

  • 1 cup all-purpose flour

  • 1 cup quick cooking oats

  • 2 teaspoons baking powder

  • 1 teaspoon baking soda

  • 1 teaspoon salt

  • 1 teaspoon ground cinnamon

Step 1:

Preheat oven to 375º F. Grease muffin cups or line with paper muffin liners. In a large bowl, cream together butter and brown sugar. Beat in maple syrup, egg, cream and vanilla. In a separate bowl, stir together flour, oats, baking powder, baking soda, salt and cinnamon. Stir flour mixture into egg mixture just long enough to incorporate. Spoon batter into prepared muffin cups. Bake in preheated oven for 15 to 20 minutes. Remove from pans and place on a wire rack to cool before serving.

These are yummy! It’s the real maple syrup that does the trick. I discovered these when Quaker Oats sent scouts over to interview us for a commercial.
