Harvest Salad

Ingredients

  • 1 Head Romaine Lettuce - chopped
  • Baby Spinach Leaves - 1 small bag
  • 1 Pomegranate - Seeds removed, washed & set aside
  • 2 Fugi or Braeburn Apples - peeled, sliced & core removed
  • 1 cup Pecan Pieces
  • 3/4 cup Raisins - soft and plump
  • 1/2 cup Extra Virgin Olive Oil
  • 1/3 cup Aged Balsamic Vinegar
  • 1 tablespoon Salt

  1. SALAD: Wash lettuce and spinach, drain and portion into 6 lunch sized servings.
  2. Cut apples into bite sized pieces and top each salad plate with even amounts.
  3. Top each salad with evenly portioned pomegranate seed berries, pecan pieces and raisins.
  4. DRESSING: In a mixing jar with cover, ... place the oil, vinegar and salt. Shake well and top each salad with an even amount. Serve and Enjoy!!
