Absolutely the Best Blueberry Muffins Ever!

Ingredients

  • 2 eggs
  • 1 cup sugar
  • 1/2 cup vegetable oil
  • 1/2 teaspoon vanilla
  • 2 cups flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 cup sour cream
  • 1 cup blueberries, fresh or frozen

  1. Beat eggs, gradually adding sugar, till thick and lemon-colored. Reduce mixer speed; slowly pour in oil and vanilla.
  2. Combine the flour, salt, and baking soda. Stir into the creamed mixture just until dry ingredients are moist; mixture will be lumpy. DO NOT OVERMIX!
  3. Gently fold in blueberries and spoon into muffin cups that have been coated with vegetable spray or lined with paper. Sprinkle with a mixture of sugar-cinnamon.
  4. Bake at 400 for 20 minutes. Makes 18-20 muffins.
