Imperial Apple cake

Ingredients

  • 2 cups peeled chopped apples
  • 1 cup chopped pecans
  • 2 cups flour
  • 2 cups sugar
  • 1 1/2 teaspoon soda
  • 1/2 teaspoon salt
  • 2 beaten eggs
  • 2/3 cup vegetable oil
  • 2 teaspoon vanilla
  • 1/2 cup butter
  • 1 egg yolk
  • 1/8 cup Brandy
  • 1 cup powdered sugar

  1. Beat eggs, oil and vanilla together and set aside.
  2. Sift dry ingrediants and then add to liquid.
  3. Add apples and nuts to batter. Just stir until mixed.
  4. Bake at 350 degrees preheated oven for one hour in tube pan.
  5. For hard sauce melt butter and add brandy. Mix in egg yolk and powdered sugar until smooth. Once cake is out of oven, cut cake and pour sauce over warm slices. This cake will come out in rough slices due to its hardy consistency.
