Pickled Squash: Appetizer-Snack

Ingredients:

  • 8 cups Sliced Squash

  • Med Onions Chopped

  • 1 Red Bell Pepper Chopped

  • 1 Green Bell Pepper Chopped

  • 3 cups Cider Vinegar

  • 3 cups Sugar

  • 1/2 teaspoon Celery Seed

  • 1/2 teaspoon Mustard Seed

Step 1:

Mix the first 4 items and cover with 1/2 cup of salt Cover with ice for 3 hours Drain

Step 2:

Mix the following and bring to a boil Cider Vinegar Sugar Celery Seed Mustard Seed

Step 3:

Add veggies and bring back to a boil for 3 minutes.

Step 4:

Pack and seal jars
