SUNSHINE EGGS FLORENTINE: Breakfast-Brunch

Step 1:

Cook 20 oz frozen chopped spinach, cool; squeeze dry, in a lg skillet, saute' 1/4 C minced onion in 3 Tbsp butter until soft. Stir in 1/4 C flour; cook l min. Stir in 2 1/2 C milk; simmer, stirring, just until thickened. Stir in spinach, Make 8 wells; break an egg in each. Cook covered over low heat 15 min or til eggs set. Enjoy!
