Pumpkin Spiced Pancakes

Ingredients

  • 2 cups flour
  • 3 tablespoons packed brown sugar
  • 1 tablespoon baking powder
  • 1 1/2 teaspoons pumkin spice
  • 1 teaspoon salt
  • 1 3/4 cups milk
  • 1/2 cup pure pumkin pie filling
  • 1 large egg
  • 2 tablespoons vegetable oil
  • 1 recipe pumkin maple sauce

  1. combine all dry ingredients
  2. combine milk, pumkin, egg & vegetable oil together, mix well then add to dry ingredients. stir just until moist; batter may be lumpy.
  3. heat pan over medium heat; spray with pam. pour 1/4 cup batter onto grill; cook til bubbles begin to burst. then over & cook another 1 to 2 minutes. repeat till all batter is used. serve warm with pumkin maple sauce & nuts.
  4. For Pumkin Maple Sauce: heat 1 cup of maple syrup, 1 1/4 cups of pumkin pie filling & 1/4 teaspoon ground cinnamon or nutmeg til warm. serve over your pancakes & enjoy. don't forget to top with pecans or cool whip..
