Morning Glory Muffins: Bread

Ingredients:

  • 2 cups grated carrots

  • 1/2 cup flaked coconut

  • 1/2 cup diced,peeled apples

  • 1/2 cup chpd nuts

  • 1/2 cup raisins or craisins-soaked in hot water and drained

  • 1 cup sugar

  • 1/4 cup brown sugar

  • 1/2 cup softened margarine or butter

  • 3 eggs

  • 2 teaspoons vanilla

  • 1 1/2 cup flour

  • 1/2 cup All Bran cereal

  • 2 teaspoons baking powder

  • 1 teaspoon cinnamon

  • 1/2 teaspoon salt

Step 1:

Combine first five ingredients and set aside. Combine sugars, eggs, margarine and vanilla in a large bowl. Beat well. In another bowl mix dry ingredients and add fruit mixture. Add to sugar mixture and stir just until moistened.

Step 2:

Spoon into 12 greased muffin cups and bake @350 for 25-30 minutes. Very moist and dense with wonderful flavor.
