Oak Street Frittata: Breakfast-Brunch

Ingredients:

  • 2 cups Black Beans

  • 3 1/2 cups Chorizo

  • 1 bunch Cilantro

  • 2 Limes – zest & juice

  • 2 1/2 tablespoons Chili Powder

  • 1 tablespoon Salt

  • 1 dozen beaten Large Eggs

  • 2 cups Roasted Red Peppers

  • 1 Red Onion – small, diced

  • 1 Ear of Roasted Corn

  • 2 Garlic Cloves – minced

  • 1 bunch Green Onions

  • Salsa Fresca (see recipe)

  • Roasted Red Pepper Sour Cream (see recipe)

Step 1:

Preheat oven to 375.

Step 2:

Fold together all ingredients (except Salsa Fresca and Roasted Red Pepper Sour Cream) well using a whisk making certain to break up any clumps bigger than a marble.

Step 3:

Ladle into oiled muffin tin and bake at 375 until firm and slightly brown, about 30 minutes.

Step 4:

Serve topped with Salsa Fresca and Roasted Red Pepper Sour Cream to taste.
