Ingredients

  • 4 small Bananas
  • 3/4 cup Sugar
  • 1 Beaten Egg
  • 1/3 cup Melted Butter
  • 1 teaspoon Soda
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Salt
  • 1/3 cup Freshly Grated Orange Peel
  • 1 1/2 cup Sifted All Purpose Flour

  1. Preheat the oven to 375 Pre-grease 10 - 12 muffin tins
  2. Mash the bananas with the sugar, egg, and melted butter. Wisk in the soda, baking powder, orange peel, and salt Fold in the flour (*do not overdo)
  3. Pour the mixture into the pre-greased muffin tins
  4. Bake 15 minutes at 375
  5. let cool for 3 minutes before removing the muffins with the back side of a paring knive.
