Peel and slice apples, place in pot, add cinnamon, cook with enough water to cover, about 45 minutes, until tender. When finished cooking, add 1 cup of sugar
Make dough, add just enough milk to bisquick to make soft dough. Pinch off a bisquit sized piece of dough, roll out on floured surface into a small circle, place a couple of tbs of apples on one half and fold over to close, close edges by pressing your finger along the edge.
Melt 2 cups of shortening in large skillet, more if needed. This should be very hot, place pies in skillet, they will brown rather quickly, turn over so the other side can brown. If you have deep fryer, they will brown on both sides at once. Place on paper towels.
