Ingredients

  • 2 medium onions, peeled
  • 6 medium, peeled, sliced, boiled potatoes
  • 2 tablespoons butter
  • 3 eggs, beaten
  • salt and pepper

  1. In a skillet, melt butter, Saute onions until opaque.
  2. Slice potatoes while onions are cooking. Add potatoes to skillet. Salt and pepper.
  3. Add beaten eggs and turn several times with pancake turner to mix seasoning and eggs into onions and potatoes. Cook under medium heat until firm.
