Smoked Salmon or Veggie Omelet

Ingredients

  • 7 Eggs, smoked salmon, sour cream/cream, chives

  1. For 2 guests: Whip together 6-7 eggs and cream until light and airy.
  2. Melt butter in a saucepan and add eggs, continuing to tilt pan so runny part of eggs gets tipped under main body.
  3. Add ingredients requested by guests from chives to scallions, tomatoes, cheese, orange/red/yellow peppers, and the delicious smoked salmon until omelet is plump and tastey looking.
  4. Flip omelet over so it is now 1/2 the size of the pan.
  5. If the omelet is extra stuffed, place it in microwave oven for about 15-30 seconds so all eggs and ingredients are cooked. This makes for a beautiful finished product. Garnish with nasturtiums from the garden, a twist of orange and sour cream on the side. Yumm!
