Fig and Walnut Pancakes: Breakfast-Brunch

Prep time:15 minutes

Ingredients:

  • 1 cup figs, coarsely chopped

  • 1/2 cup coarsely chopped walnuts

  • 1 cup flour

  • 1 tablespoon baking powder

  • 1 teaspoon cinnamon

  • 1/2 teaspoon nutmeg

  • 1/2 teaspoon salt

  • 2 eggs

  • 1 1/2 cups milk

  • 1 tablespoon vegetable oil

  • 1 teaspoon vanilla

Step 1:

In large bowl, stir together figs, nuts, flour, baking powder, cinnamon, nutmeg and salt. In separate bowl, beat together eggs, milk, oil and vanilla: add to dry ingredients and stir to blend.

Step 2:

Pour about 1/3 cup batter for each pancake onto hot lightly greased griddle. Bake until bubbles on top break and batter is set a edges. Turn to brown other side. Serve hot.
