Puffed Apple Pancake

Ingredients

  • 6 eggs (beaten)
  • 1 1/2 cups milk
  • 3 tablespoons sugar
  • 1 teaspoon vanilla
  • 1/2 teaspoon salt
  • 1/4 teaspoon cinnamon
  • 1/4 lb butter or margarine
  • 2 apples
  • 3 tablespoons brown sugar
  • 1 Cup flour

  1. Mix dry ingredients, add milk,eggs & vanilla (batter will be lumpy). In 13x9" baking dish melt butter. Add apple slices, return to oven until sizzles, do not let burn.
  2. Remove from oven, pour batter over the apples, sprinkle with brown sugar. Bake 20 minutes or until puffed and brown. Serve immediately with warm maple syrup. Oven temp. 425 degrees.
