Baked Eggs with Four Cheeses

Ingredients

  • 8 Eggs
  • 1 cup Half and half
  • 2 teaspoon Sugar
  • 1/2 lb Grated sharp cheddar cheese
  • 1/2 lb Grated monterey jackcheese
  • 4 oz Neufchatel, cubed
  • 1 lb Cottage cheese, small curd
  • 2/3 cup Butter, melted
  • 1/2 cup Flour
  • 1/2 teaspoon Baking powder
  • 1/2 teaspoon Spike (or assorted herbs)

  1. Beat together eggs, milk, and sugar. Add cheeses and melted butter and mix well.
  2. Mix in flour and baking powder.
  3. Pour into 3 quart baking dish sprayed with non-stick coating.
  4. Cover and refrigerate overnight.
  5. Bake 45-50 minutes at 350 degrees or until knife inserted in center comes out clean. Cut into rectangles.
