Italian Sausage Strata: Breakfast-Brunch

Ingredients:

  • 1 day old loaf of french bread

  • 1 lb Mild Italian bulk Sausage

  • 1/4 lb baby bella mushrooms, chopped

  • 1 cup red roasted peppers, diced

  • 1/4 cup finely diced onions

  • 3 fresh garlic cloves minced

  • Salt and pepper to taste

  • 6 eggs, beaten

  • 2 cups half and half

  • 1 teaspoon paprika

  • 1 tablespoon dijon mustard

  • 1 teaspoon crushed red pepper

  • 2 cups shredded mozzarella

  • fresh cut scallions for garnish

Step 1:

Preheat your oven to 375 degrees. Dice your french bread into 1 inch cubes and add to a large mixing bowl. In a large greased skillet, saute the Italian sausage until browned then add the mushrooms, garlic and onions and cook for 3 minutes. Then add the roasted peppers and crushed red peppers and continue to saute for an additional 2 minutes. Spoon the mixture over the bread and toss together.

Step 2:

In a large bowl, mix the eggs, half and half, mustard and paprika. Pour over the bread mixture and lightly toss until everything is evenly combined. Spray a 13 x 9 inch baking dish and spoon in the mixture. Once it is all in gently press it all down so a little bit of batter moves to the top.

Step 3:

Bake in the oven uncovered for 45 minutes or until golden brown on top. Remove from oven and spread mozzarella on top and cover and let sit for 5 minutes. Uncover, slice and serve with fresh scallions for garnish.
