Mexican Eggs Fiesta: Breakfast-Brunch

Prep time:6 minutes

Step 1:

Spray a ramekin with a pan release spray and add two eggs. Sprinkle with 1/4 teaspoon herbs

Step 2:

Add about 3 tablespoons of finely diced Black Forest ham to cover the eggs.

Step 3:

Add a layer of shredded Canadian old cheddar cheese to cover ham.

Step 4:

Cut a corn tortilla in half and stand it against one edge of the ramekin.

Step 5:

Bake for about 5 - 8 minutes at 375 F till tortilla is crisp. Slide out onto a plate and add a dollop of sour cream then salsa.
