Mexican Eggs Fiesta

  1. Spray a ramekin with a pan release spray and Line the Ramekin with thin sliced ham. Add two eggs. Sprinkle with 1/4 teaspoon herbs de Provence.
  2. Add a layer of shredded Canadian old cheddar cheese to cover the eggs.
  3. Cut a corn tortilla in half and stand it against one edge of the ramekin.
  4. Bake for about 10 - 12 minutes at 375 F till tortilla is crisp.Slide out onto a plate and add a dollop of sour cream then salsa.
