Sunrise Ham & Egg Cups: Breakfast-Brunch

Ingredients:

  • 12 Thin slices of Brown Sugar Cured Ham

  • 1 Quarter Inch slice of Smoked Gouda Cheese, Quartered

  • 4 Eggs

  • 2 teaspoons Sliced Scallions

  • Salt & Pepper

Step 1:

Line four buttered 6 oz Pyrex cutard dishes with three slices of ham each. Place a quarter of a slice of smoked Gouda in the bottom of each cup. Add salt and pepper to taste. Break and add one egg to each cup. Top with sliced scallions.

Step 2:

Preheat oven to 350 degrees. Bake for 20 - 25 minutes until eggs are set to your preference. Use two spoons to gently scoop the ham and egg out of each cup. Serve two ham and egg cups per plate.

Step 3:

Serve with potatos O'Brien or hash browns.
