Spangler's Blueberry Pancakes

Ingredients

  • 1 cup Flour
  • 1 teaspoon Baking Soda
  • 2 Eggs
  • 1 cup Buttermilk
  • 4 tablespoons Melted Butter
  • Blueberries, 5-7 per Pancake

  1. Mix the dry and wet ingredients separately. Stir the dry and wet ingredients together. Let the batter set for at least 10 minutes.
  2. Heat a griddle to 350 degrees. Lightly oil the griddle surface. Pour 1/4 cup of the batter for each pancake. Place 5-7 blueberries on each pancake. Fry until golden brown before flipping. Cook second side until all the batter is cooked.
  3. Serve with bacon, ham or sausage.
  4. Options: Substitute other fresh fruit for the blueberries. Try adding chopped pecans to the batter and topping with sliced bananas.
