SAUSAGE-EGG FRITTATA

Ingredients

  • 32 oz. bag frozen O’Brien Potatoes
  • 1 lb sage flavored bulk sausage, cooked
  • 10 hard boiled eggs, chopped
  • 1 can condensed cream of mushroom soup
  • 2/3 soup can milk
  • Pepper, to taste
  • 2 cups Colby-Jack cheese, shredded
  • 8 tomato slices, thinly sliced
  • 3 green onions, chopped

  1. In 8 16oz. greased ramekins, or a 9x13” greased casserole, layer potatoes, sausage and eggs. Combine soup, milk and pepper, then pour over other ingredients. Sprinkle top with cheese. Cover with foil. Bake in a 350 degree oven 45-55 minutes.
  2. Remove from oven, garnish with tomato slices and green onions. Serve hot.
  3. *This can be prepared the night before and refrigerated until you’re ready to bake it.
