Jo's Buttermilk Pancakes

Ingredients

  • 2 eggs, beaten
  • 2 cups buttermilk
  • 1/4 cup oil
  • 1 3/4 cups flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • butter for griddle

  1. Mix wet ingredients in a large bowl.
  2. Add dry ingredients and mix until large lumps are gone. Try not to overmix.
  3. Melt butter on hot griddle and pour out batter into 4 inch pancakes.
