Sherri's Frittata: Breakfast-Brunch

Prep time:1 hour

Ingredients:

  • 10 eggs

  • 2 cups Ricotta --drain any liquid

  • 1 cup Grated Asiago Cheese

  • 1 cup Grated Provolone Cheese

  • 1/2 cup Parmesan Cheese

  • 3 tablespoons Chopped Garlic

  • 1 large tomato chopped/seeded--drain liquid

  • 1 teaspoon black pepper

  • 1 teaspoon salt

Step 1:

Heat oven to 375F Lightly grease a 9x13x2 baking dish.

Step 2:

Whisk together eggs, Ricotta, Asiago, Provolone, salt and peppper.

Step 3:

Pour egg mixture into greased baking dish.

Step 4:

Sprinkle tomatoes and parmesan on to of egg mixture.

Step 5:

Bake for 45 minutes or until mixture is set.
