Eggs Florentine

Ingredients

  • 2 Creamed Spinach/10 oz.
  • 4 Ham slices
  • 4 Eggs
  • 1/3 cup Chopped Water Chestnuts
  • 1/8 teaspoon Nutmeg
  • 1/2 cup Swiss or Montary Jack
  • 2 tablespoons Pimientos

  1. Microwave spinach on high 5-6 minutes
  2. Grease small dishes and line with a ham slice, spread spinich over ham
  3. Make indentation in spinach, crack egg, place in spinich. Sprinkle with nutmeg
  4. Bake at 450 16-19 minutes or until egg is set. Remove and sprinkle cheese and pimientos over and return to oven 2 minutes or until cheese is melted. Serve immediately
