At Cumberland Falls Crab Quiche

  • 1 1/2 cups sharp cheddar shredded,
  • 2 tablespoons flour
  • 1 1/2 cups half and half
  • 4 Eggs
  • 6 oz Crab *Frozen ok
  • 1/2 cup Green Onion chopped
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Pepper
  • 1/2 teaspoon Seasoning appropr. to eggs ie: Old Bay, Tarragon, Lemon Thyme,Cayenne (A different slant with each)

  1. Toss the cheese with the flour. Add half and half or whatever milk you would like to use for calorie reduction. Mix in the beaten eggs. Add onion, and whatever seasoning you are choosing to use to give this particular quiche your very special touch. Add crab. Mix well. Pour into pastry shell. (We actually make the crust but some of the commerically prepared ones work just fine)
  2. Bake at 350 Degrees for 55-65 mins or until set. If you use a deep dish element, cooking time may be longer and you may wish to reduce temp. to 325 to avoid an over browned top and uncooked product.
