Banana Muffins

  • 1/2 cup Butter
  • 1 cup Sugar
  • 2 Large Eggs
  • 1 1/4 cup All Purpose Flour
  • 1/2 teaspoon Salt
  • 1 teaspoon Baking Soda
  • 3 Very Ripe Bananas
  • 1 teaspoon Real Vanilla

  1. Preheat Oven to 350 Degrees
  2. Butter or Pam Large Muffin Tin
  3. Cream the butter with the sugar to really get it mixed. Add the eggs one at a time and mix well. Combine all dry ingredients together in another bowl.
  4. Peel bananas and beat them very well until smooth. Incorporate the banana mixture into the butter mixture. Stir in the real vanilla. Make well in bowl and turn in the flour mixture just enough to barely mix.
  5. DO NOT OVERMIX. Muffins are barely mixed and if there is a little smattering of flour still visible--This is fine. Bake 15-18 mins or until a toothpick comes out clean. These are awesome. Enjoy!
