Goat Cheese & Pistachio Spread

Ingredients

  • 1 clove Organic garlic, peeled and minced
  • 1/2 to 1 teaspoon sea salt
  • 3 3½-inch rolls Montrachet or other goat cheese
  • 1/2 cup Organic unsalted butter, softened
  • 1/4 cup Organic pistachios, toasted and chopped
  • 1/4 cup Organic chives, chopped
  • black pepper, to taste

  1. In medium mixing bowl, crush garlic and sea salt to paste. Add cheese, butter, pistachios, chives, sea salt and sepper. Beat until smooth.
  2. Spread into serving dish. Chill covered until 30 minutes before serving time. Best made the day before to allow flavors to mellow.
  3. Serve at room temperature with toasted French bread slices or assorted crackers.
