Caroline's Goat Cheese & Pistachio Spread: Appetizer-Snack

Prep time:10 minutes

Ingredients:

  • 1 clove Organic garlic, peeled and minced

  • 1/2 to 1 teaspoon sea salt

  • 3 3½-inch rolls Montrachet or other goat cheese

  • 1/2 cup Organic unsalted butter, softened

  • 1/4 cup Organic pistachios, toasted and chopped

  • 1/4 cup Organic chives, chopped

  • black pepper, to taste

Step 1:

In medium mixing bowl, crush garlic and sea salt to paste. Add cheese, butter, pistachios, chives, sea salt and sepper. Beat until smooth.

Step 2:

Spread into serving dish. Chill covered until 30 minutes before serving time. Best made the day before to allow flavors to mellow.

Step 3:

Serve at room temperature with toasted French bread slices or assorted crackers.
