Crustless Spinach Pie: Breakfast-Brunch

Ingredients:

  • 10 oz Frozen Spinach, thawed & well drained

  • 4 oz Feta Cheese

  • 2 cups Low-fat Cottage Cheese

  • 8 Eggs

  • 1/4 cup Water

  • 2 tablespoons Flour

  • Salt & Pepper

Step 1:

Recipe is high in protein, iron, calcium, vitamin A and betacarotene and is relatively low in fat. Broccoli can be substituted for spinach. Beat the eggs with the water, flour, salt, pepper

Step 2:

Add in this order while stirring: Feta Cheese, Cottage Cheese, Spinach

Step 3:

Pour mixture into lightly oiled or nonstick pie pan.

Step 4:

Bake at 350 for 55-60 mins
