Ingredients:
6 Eggs well beaten

1/3 cup Flour

3/4 tablespoon Baking Powder

1/3 teaspoon Salt

1 3/4 cups Cottage Cheese
-
2 tablespoons Chopped Green Chilies - canned

3/4 cup Monterrey Jack Cheese - shredded

3/4 cup Cheddar Cheese - shredded

1/3 cup Melted butter
-
1/2 lb Choirzo sausage - browned/drained *optional
Step 1:
Spray a 9" pie plate with Pam nonstick spray.
Step 2:
Beat eggs, then add all other ingredients. Pour into pie plate. At this point the dish can be covered and refrigerated overnight.
Step 3:
Preheat oven to 350 degrees. Bake for 40 minutes, add some shredded mozarella cheese to the top, and continue baking for 5 additional minutes.
Step 4:
Remove from oven and let sit 10 minutes before serving. Cut into 6 pie shaped pieces. Serve with salsa or sour cream.
