Ingredients

  • 1/2 cup butter @ room temperature
  • 3/4 cup sugar
  • 2 large eggs
  • 2 teaspoons grated orange zest
  • 1 teaspoon vanilla extract
  • 2 1/4 cups flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/3 cup cranberries
  • 1/2 cup toasted hazelnuts or amonds

  1. In a large bowl beat together butter, sugar and eggs. Add orange zest and vanilla.
  2. In medium bowl stir together flour, baking powder and salt until well mixed. Add dry ingredients to butter mixture and stir to form a dough. Stir in cranberries and nuts.
  3. Divide the dough in half and place each piece on baking sheet. Shape each piece of dought into a log approx, 3 inches wide and 10 inches long.
  4. Bake Biscotti at 350 degrees until light golden brown and fairly firm, about 20-25 minutes. Cool logs at least 10 minutes. Transfer logs to work surface and slice into 1 inch strips.
  5. Place biscotti back on baking sheet and bake at 300 degrees for approx. 8 minutes then turn and bake again for another 8 minutes until dry and crisp. Store in airtight container for weeks!
