Blueberry Buttermilk Pancakes: Breakfast-Brunch

Prep time:5 minutes

Ingredients:

  • 1 cup buttermilk

  • 2 eggs

  • 1 tablespoon sugar

  • 1 teaspoon vanilla

  • 2 tablespoons canola oil

  • 1 cup flour

  • 4 teaspoons baking powder

  • 1/2 cup blueberries

Step 1:

Place all ingredients in bowl except the blueberries and mix only until lumpy then fold in the blueberries.

Step 2:

Add 1 tablespoon of oil to frypan and heat on medium for five minutes.

Step 3:

Pour enough pancake mixture to form a medium sized pancake. Fry on medium for about 3 or 4 minutes or until top forms bubbles. Flip over and fry for about 3 more minutes.

Step 4:

Serve hot pancakes topped with warm maple syrup and a few blueberries on top or top with fruit salad topped with blueberry yoghurt.
