Baked Grits with Cheese and Salsa: Breakfast-Brunch

Ingredients:

  • 1 1/2 cups Quick grits

  • 1 1/2 cups Half and Half cream

  • 1 quart Water

  • 3/4 teaspoon Salt

  • 2 cups Cheddar cheese (grated)

  • 1 tablespoons Parmesan cheese, shredded

  • 1/2 teaspoon Onion powder

  • 1/2 cup Salsa (prepared)

  • 2 Eggs (beaten)

Step 1:

Combine water and half & half in large non-stick pot, bring to a boil. Add grits slowly and cook whisking constantly until thick. Stir in cheese, salsa, seasonings and beaten eggs and mix well. Pour into greased 3 quart baking dish. Sprinkle with more cheese if desired. Bake for 20 - 30 minutes at 350 degrees or until firm. Cover if needed to prevent over browning.
