Sift Dry ingrediance (sugar, flour, cinnamon, baking soda, salt) together into large bowl.
Mix together (coconut, raisins, carrots, apples, pecans) and then stir in dry ingrediance.
Stir: eggs, oil and vanilla together and mix into all other ingrediants, do not beat it, but mix lightly. Refrigerate until needed.
Muffin mix can be held in refrigerator for 2-3 weeks.
Bake at 375' for 20 in muffin tin. DO NOT OVERBAKE
