Summer's Quiche

Ingredients

  • 5 oz All Purpose Flour
  • 3 oz Cornmeal
  • 5.3 oz Butter (cold)
  • 1 tablespoon Sugar
  • 1.5 oz Cold Water
  • 1 1/8 cups Heavy Cream
  • 3 Whole Eggs
  • 3 Egg Yolks
  • 1/2 teaspoon Salt
  • Dash Nutmeg
  • 2 1/2 teaspoons Chopped Parsley
  • Dash Cayenne Pepper
  • 1 teaspoon Lemon Juice

  1. For the Cornmeal Crust, you combine first four ingredients, then add water till combined and chill for one hour. Then roll and place into pie pan.
  2. For the Quiche Custard, you combine all remaining ingredients in a bowl and mix.
  3. Pour into crust and add any filling you like, such as ham.
  4. Bake at 350 degrees till done.
